Caramel Apple Pie

An easy variation on an old favorite.

7 Granny Smith apples
1 c brown sugar
1 c white sugar
1/2 c butter
1 beaten egg
1 c heavy cream
1/2 c water
1 tbsp vanilla
1/2 tsp salt

Core and dice 5 apples, place in large saucepan with about two cups of water, or enough to cover apples halfway. Bring to a simmer, allow to cook down to applesauce. Add butter, sugar, water, salt and egg, and allow to come to a slow boil. Boil for one minute, then add the heavy cream and stir quickly. Reduce heat to minimum and allow to sit for five minutes. Core and slice the remaining apples and arrange the slices in a circle on the bottom of your pie pastry. Gently ladel the apple/caramel sauce over the apple slices and close your crust. Bake at 350 degrees F. for 45 minutes, remove from oven and spread a light coating of butter over the crust. Sprinkle white sugar liberally over the butter, and place in the oven for another 15 minutes. Remove and allow to cool.
