Chocolate No-Bakes

Simple cookies for any occasion. Even a child can make them! (No really, this time I mean it. I never once set fire to anything while making these cookies, no matter what Mom told you.)

2 c sugar
1/2 c milk
1/4 c cocoa
1/4 c butter
1/2 c peanut butter
1 tsp vanilla
3 c quick-cook oatmeal

Combine sugar, milk, cocoa and butter in a medium saucepan, stirring well. Bring to a boil and boil for one minute, stirring constantly. Remove from heat, and add peanut butter. Mix until mostly dissolved, then add vanilla and mix well. Finally, add oatmeal one cup at a time, mixing until chocolate is absorbed. Move quickly, the chocolate can harden before you've stirred in all of the oats. Drop by rounded spoonfuls onto wax paper and allow to cool for five minutes.

The only problem you're likely to encounter making these cookies is allowing the chocolate sauce to cook too long or too little. The *instant* it starts to boil, start counting the seconds, and the *instant* you reach 60 remove the pan from heat. Have everything ready to go beforehand, as you will ruin the cookies if they cool too long after you boil the sauce.
