Dutch Babies

A fluffy bit of lemony goodness, perfect for feeding the masses on a budget.

5 eggs
1 c milk or heavy cream
1 c flour
1 tsp vanilla
5 tbsp butter
Fresh lemons, or lemon juice
Powdered sugar

Combine eggs, milk, flour, and vanilla in a large mixing bowl, using an electric beater. Beat on high speed 5-7 minutes, introducing as much air into batter as possible.
Pre-heat oven to 475 F., melt the butter in a 9" round glass baking pan. When butter is completely melted, pour the batter directly over, and bake for 12 minutes. An inserted knife should come clean, but be careful not to over cook!
Sprinkle each slice with powdered sugar, and serve with a large lemon slice.

You can also try maple syrup instead of lemon and sugar, or try a light cinnamon syrup with the sugar. Dutch Babies have no outstanding taste of their own, and can even be used as a quiche pastry. Have fun!
