Plain Muffins

The basic muffin recipe.

1 3/4 flour
1/3 c sugar
3/4 c milk
1/3 c melted butter
1 egg
2 1/2 tsp baking powder
1/2 tsp salt
1 c fruit*

Mix all ingredients except fruit until moist, then add fruit. Spoon into muffin cups and bake for 20 minutes at 400 degrees F. Let cool. Makes about twelve muffins.

*The fruit can be just about anything...raisins, blueberries, strawberries, nuts, etc. You can use jellies to flavor the muffins, as well. Simply mix in 1/2 cup of the jelly, then place about a teaspoon of jelly into the middle of the muffins before baking. For lemon poppy seed muffins, reduce the milk to 1/2 cup, then add 1/4 cup of lemon juice and two tablespoons of poppy seeds. This will leave you with 10 or 11 muffins, rather than 12.
